Just wanted to share a tidbit with you about Shaw’s. I went there today to buy some shredded cheese for my broccoli & cheddar soup (recipe coming soon). I picked up the large 16oz cheddar cheese because it was on sale for $4.99. I looked up and saw that the 8oz was on sale for $1.88. After doing some quick math in my head, I realized it was cheaper to buy two 8oz bags than one 16oz bag. I saved $1.23. Every penny counts!! Lesson: just because it’s on sale, doesn’t mean you can’t get it cheaper another way!
I had some leftover rice from dinner last night. My husband isn’t a big fan of rice, so I knew that we wouldn’t be having it for dinner two nights in a row. I love rice, and was trying to figure out what to do with the leftovers for lunch today. I remembered that I had bought some zucchini the other day which I have not used yet. I like fried rice, but I find that the fried rice from the local Chinese restaurant is a little too heavy for me. I decided to come up with my own version.
For some extra protein you can add leftover chicken, beef, pork, shrimp, or tofu. Use any vegetables that you have on hand. This would be good with leftover roasted vegetables.
1/2 zucchini, diced
1/2 onion, diced
Handful of grape tomatoes, sliced in half
2 eggs, beaten
2c leftover rice
Drizzle of olive oil
Salt and pepper to taste
4 dashes of soy sauce
Drizzle some olive oil in a nonstick pan. Heat pan over medium heat. Add zucchini, onion, and tomatoes. Add 1 teaspoon of butter. You can omit the butter if you wish, I like it for a little extra flavor. Cook for about 4-5 minutes. Add eggs to pan, stir once in a while for about 3 minutes until cooked. Add rice, cook until heated through, about another 3–4 minutes. Add a few dashes of soy sauce and let heat for about another minute. Serve hot.
I was surfing the web this morning – for what, I can’t remember – however, I came across a recipe for Strawberry Jam from Maangchi. It only called for TWO ingredients – YES, TWO!
